RAGU ALLA BOLOGNESEThe Bolognese sauce is a traditional meat sauce Bolognese cuisine. The sauce is traditionally served with egg noodles, but is also used to flavor other types of pasta such as lasagna (enriched with the sauce) and the typical poor man’s dish of the past: the polenta. A very common use is outside of the meat sauce for spaghetti (erroneously called spaghetti bolognese, quite common in Northern Europe and even sold in cans): this dish now common in Italy, it is certainly attributable to the cuisine of Bologna because the noodles are not part of the Emilian tradition that has always preferred the pasta to the egg, usually fresh, compared to pasta made from durum wheat semolina, more typically southern and generally dry.
